Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour a loaf pan (approximately 9×5 inches).
- Step 2: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Step 3: In a separate bowl, whisk together the eggs, milk, vegetable oil, lemon zest, and lemon juice.
- Step 4: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Step 5: Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Step 6: Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. While cooling, whisk together powdered sugar and enough lemon juice to create a smooth, pourable glaze. Once cooled, drizzle the glaze over the loaf.
