Ingredients
- Chicken breasts, boneless and skinless (1.5 lbs)
- Sweet chili sauce (1/2 cup)
- Large flour tortillas or wraps (8 count)
- Romaine lettuce, shredded (1 head)
- Shredded carrots (1 cup)
- Olive oil (1 tablespoon)
- Lime juice (1 tablespoon)
- Salt and black pepper (to taste)
Instructions
- Step 1: Cut the chicken breasts into 1-inch cubes and season them liberally with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked through and golden brown.
- Step 2: Remove the cooked chicken from the heat and transfer it to a medium bowl. Pour the sweet chili sauce and lime juice over the chicken, tossing gently until every piece is evenly coated. Set the chicken aside while preparing the wraps.
- Step 3: Lay out the large flour tortillas on a clean, flat surface. In the center of each tortilla, layer a generous amount of shredded romaine lettuce and shredded carrots.
- Step 4: Spoon about 1/4 to 1/3 cup of the sweet chili chicken mixture over the layer of vegetables in the center of each tortilla. Do not overfill the wrap.
- Step 5: To roll the wrap, first fold in the left and right sides of the tortilla over the filling, then tightly roll the bottom edge up over the filling toward the top. Slice the wraps diagonally in half before serving immediately.
Notes
- For the freshest flavor and texture, store the chicken filling and the prepared vegetables separately in airtight containers in the refrigerator, assembling the wraps only just before you plan to eat them.
- If warming the leftover sweet chili chicken filling, use low heat on the stovetop or microwave briefly, stirring often, as overheating can cause the sugary sauce to quickly caramelize and become overly sticky.
- Add a delicious textural contrast by sprinkling a few teaspoons of chopped peanuts, cashews, or toasted sesame seeds directly onto the lettuce and carrot base before adding the chicken mixture.
- To achieve the best sweet and savory balance, season your raw chicken aggressively with salt and pepper, ensuring a proper sear on the cubes before incorporating the sweet chili sauce and lime juice.
