- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 bag crushed Doritos (Nacho Cheese flavored recommended)
- 1 small onion, chopped
- Sour cream or guacamole (optional)
Instructions
- Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease. Add the chopped onion and cook until softened, about 3-5 minutes.
- Step 2: Stir in the taco seasoning and water. Bring to a simmer, then reduce heat and cook for 5-7 minutes, or until the sauce has thickened slightly.
- Step 3: Stir in the black beans and corn. Heat through.
- Step 4: Divide the cooked rice among bowls. Top with the taco meat mixture, shredded cheese, and crushed Doritos.
- Step 5: Add sour cream or guacamole, if desired. Serve immediately.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For reheating, microwave individual portions for 1-2 minutes, or until heated through, adding a splash of water if needed to prevent dryness.
- Elevate your bowl by adding a dollop of your favorite salsa for extra flavor and visual appeal.
- To prevent the Doritos from getting soggy, add them just before serving and sprinkle them generously over the other ingredients.
