Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 bag crushed Doritos (Nacho Cheese flavored recommended)
  • 1 small onion, chopped
  • Sour cream or guacamole (optional)

Instructions

  1. Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease. Add the chopped onion and cook until softened, about 3-5 minutes.
  2. Step 2: Stir in the taco seasoning and water. Bring to a simmer, then reduce heat and cook for 5-7 minutes, or until the sauce has thickened slightly.
  3. Step 3: Stir in the black beans and corn. Heat through.
  4. Step 4: Divide the cooked rice among bowls. Top with the taco meat mixture, shredded cheese, and crushed Doritos.
  5. Step 5: Add sour cream or guacamole, if desired. Serve immediately.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For reheating, microwave individual portions for 1-2 minutes, or until heated through, adding a splash of water if needed to prevent dryness.
