  • 1 tablespoon Vegetable Shortening (for coating)

Instructions

  1. Step 1: Place the finely chopped 12 ounces of white chocolate in a heat-safe bowl.
  2. Step 2: In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
  3. Step 3: Pour the hot cream over the white chocolate. Let it sit for 1 minute, then whisk until smooth and completely melted. Stir in the orange liqueur, orange extract, and salt.
  4. Step 4: Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 2 hours, or until the ganache is firm enough to roll.
  5. Step 5: Once firm, use a spoon or small cookie scoop to portion the ganache into small balls. Roll each portion between your palms to form smooth spheres. Place the rolled truffles on a parchment-lined baking sheet and return to the refrigerator.
  6. Step 6: Melt the remaining 1 cup of white chocolate with the vegetable shortening in a double boiler or microwave in 30-second intervals, stirring in between, until smooth. Dip each truffle into the melted white chocolate, ensuring it's fully coated. Place back on the parchment paper. Sprinkle with orange zest immediately before the coating sets. Refrigerate briefly to set completely.
