- 2 large zucchinis, sliced
- 1 pound ground beef
- 1 (24 ounce) jar marinara sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 cup chopped onion
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Step 1: Preheat oven to 375 degrees F (190 degrees C). Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Step 2: Stir in marinara sauce, Italian seasoning, garlic powder, and chopped onion into the skillet with the browned ground beef. Simmer for 5 minutes.
- Step 3: In a greased 9×13 inch baking dish, layer half of the zucchini slices, then half of the meat sauce mixture, and then sprinkle with half of the mozzarella cheese.
- Step 4: Repeat layers with remaining zucchini slices, meat sauce, and mozzarella cheese.
- Step 5: Sprinkle the top with grated Parmesan cheese.
- Step 6: Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly and zucchini is tender.
Notes
- For best results, let the casserole cool completely before covering and refrigerating for up to 3 days.
- Reheat individual portions in the microwave or bake slices in a 350°F oven until warmed through and the cheese is melty again.
- Serve with a dollop of ricotta cheese or a sprinkle of fresh basil for added flavor and visual appeal.
- To prevent a watery casserole, lightly salt the zucchini slices and let them sit for 15 minutes before layering to draw out excess moisture.
