  • 2 large zucchinis, sliced
  • 1 pound ground beef
  • 1 (24 ounce) jar marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 cup chopped onion
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Step 1: Preheat oven to 375 degrees F (190 degrees C). Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Step 2: Stir in marinara sauce, Italian seasoning, garlic powder, and chopped onion into the skillet with the browned ground beef. Simmer for 5 minutes.
  3. Step 3: In a greased 9×13 inch baking dish, layer half of the zucchini slices, then half of the meat sauce mixture, and then sprinkle with half of the mozzarella cheese.
  4. Step 4: Repeat layers with remaining zucchini slices, meat sauce, and mozzarella cheese.
  5. Step 5: Sprinkle the top with grated Parmesan cheese.
  6. Step 6: Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly and zucchini is tender.

  • For best results, let the casserole cool completely before covering and refrigerating for up to 3 days.
  • Reheat individual portions in the microwave or bake slices in a 350°F oven until warmed through and the cheese is melty again.
