Ingredients

  • Ripe Tomatoes, assorted varieties: 2 pounds
  • Extra Virgin Olive Oil: 1/4 cup

  • Garlic, minced: 2 cloves
  • Red Onion, thinly sliced: 1/4 cup
  • Dried Oregano: 1 teaspoon

Instructions

  1. Step 1: Wash and core the tomatoes. Cut into wedges, slices, or bite-sized pieces depending on the variety and your preference. Place in a large bowl.
  2. Step 2: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper.
  3. Step 3: Add the thinly sliced red onion and chopped fresh basil to the vinaigrette.
  4. Step 4: Pour the vinaigrette over the tomatoes in the bowl. Gently toss to coat all the tomatoes evenly.
  5. Step 5: Cover the bowl and refrigerate for at least 30 minutes, or up to several hours, to allow the flavors to meld. Toss occasionally.
  6. Step 6: Before serving, taste and adjust seasoning as needed. Serve chilled or at room temperature.

  • Store marinated tomatoes in the refrigerator for up to 3 days; the flavor actually improves overnight.
