Ingredients
- Ripe Tomatoes, assorted varieties: 2 pounds
- Extra Virgin Olive Oil: 1/4 cup
- Balsamic Vinegar: 2 tablespoons
- Fresh Basil Leaves, chopped: 1/4 cup
- Garlic, minced: 2 cloves
- Red Onion, thinly sliced: 1/4 cup
- Dried Oregano: 1 teaspoon
- Salt and Black Pepper: to taste
Instructions
- Step 1: Wash and core the tomatoes. Cut into wedges, slices, or bite-sized pieces depending on the variety and your preference. Place in a large bowl.
- Step 2: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper.
- Step 3: Add the thinly sliced red onion and chopped fresh basil to the vinaigrette.
- Step 4: Pour the vinaigrette over the tomatoes in the bowl. Gently toss to coat all the tomatoes evenly.
- Step 5: Cover the bowl and refrigerate for at least 30 minutes, or up to several hours, to allow the flavors to meld. Toss occasionally.
- Step 6: Before serving, taste and adjust seasoning as needed. Serve chilled or at room temperature.
Notes
- Store marinated tomatoes in the refrigerator for up to 3 days; the flavor actually improves overnight.
- Reheating is not recommended, as it can make the tomatoes mushy; instead, bring to room temperature for serving.
- These marinated tomatoes are fantastic spooned over grilled chicken or fish for a burst of fresh flavor.
