  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • All-purpose flour: 1 3/4 cups
  • Baking soda: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Unsalted butter, softened: 1/2 cup (1 stick)
  • Granulated sugar: 3/4 cup
  • Large eggs: 2
  • Mashed ripe bananas: 3 medium
  • Matcha powder: 2 tablespoons
  • White chocolate chips: 1/2 cup

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Step 2: In a medium bowl, whisk together the flour, baking soda, salt, and matcha powder.
  3. Step 3: In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas.
  4. Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the white chocolate chips.
  5. Step 5: Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Step 6: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • To keep your matcha banana bread moist, store it tightly wrapped at room temperature for up to 3 days or in the refrigerator for up to a week.
  • Warm up a slice in the microwave for 15-20 seconds for a melty white chocolate experience.
  • This bread is delicious served with a dollop of whipped cream and a dusting of extra matcha powder for a vibrant presentation.
  • For the best matcha flavor, sift the powder with the flour to prevent clumps and ensure even distribution throughout the batter.
